A Quick and Easy Crowd Pleaser

M’m! M’m! Good!

As Fall arrives and we get into full gear with the season, I’m always looking for a quick and easy recipe to feed my people. This Creamy Tomato Basil Bisque is delicious, usually takes about 20 minutes to make and is a true crowd-pleaser for all ages. Serve it with a salad and crusty bread for a more sophisticated palate or grilled cheese for a simpler meal. Either way, bowls will be clean and tummies will be full! Enjoy!

Creamy Tomato Basil Bisque

INGREDIENTS

1 small onion diced

2 tbsp olive oil

2 cans of tomato soup (condensed)

1 1/2 cup of buttermilk

1 cup of heavy cream

2 tablespoons of fresh basil chopped

DIRECTIONS

Heat oil in a Dutch oven over medium heat. Add onions and sauté until translucent. Add tomato soup, buttermilk and heavy cream. Bring to a boil stirring constantly. Add fresh basil and let simmer for 3-5 minutes stirring occasionally. Remove from heat and use immersion blender to puree soup until smooth. Enjoy!
